Beef

  • $125 slaughter per head

500 pound minimum carcass weight charged plus slaughter fee

  • $1.25 per pound carcass weight processing

  • adding beef fat to ground $2.00 per pound

  • Beef over 1000 pound hanging weight is an extra $15 slaughter fee

  • Horns over 36 inches is an extra $15 slaughter charge

  • $50 for skinning head

  • Patties: $125 minimum, $1.25 per batch after minimum

  • Non standard cutting $0.25 extra per carcass weight

Non standard cutting refers to anything not on Westcliffe Meats cut sheet

ex. fajita meat, flanken/korean short ribs, tomahawks, cowboy steaks, etc.

Bison and Yak

  • $150 Slaughter

  • $1.55 per pound carcass weight processing

  • 500 pound minimum carcass weight charged plus slaughter fee for Bison

  • 300 pound minimum carcass weight charged plus slaughter fee for Yak

Domestic Elk under USDA Inspection

  • $165 per head slaughter

  • $2 per pound processing

Lamb/Goats

  •  $160 per lamb or goat

Hogs

  • $100 Slaughter

  • $1.15 per pound for processing 

  • $1.25 per pound for curing

  • $2.50 per pound for Smoking

  • $1.50 per pound for mixing sausage
